Tomato, Corn and Avocado Salad
(Serves 4 - 6)

Ingredients:
Dressing:
2 tablespoons olive oil
1 tablespoon fresh lime juice
1/4 cup cilantro, chopped
1/4 teaspoon salt
pinch black pepper

Salad:
1 cup cooked corn, canned or frozen
3 medium ripe tomatoes, diced
1 large ripe avocado, peeled and diced
1/4 cup red onion, finely diced

Directions:

  1. Prepare dressing:  In a medium bowl, whisk together oil, lime juice, cilantro, salt and pepper.
  2. Mix salad:  Add corn, tomatoes, avocado and onion.  Toss gently, so the avocado doesn't break up too much.
