Taco Salad

This recipe is a really popular with kids and teens.  You can try cooked chicken instead of ground beef.
(8 servings)

Ingredients:       
8 oz ground beef or turkey
1 (1.25 ounce) package taco seasoning mix
1 small head or 1/2 large iceberg lettuce, shredded
1 carrot, peeled and grated
1/2 red onion, thinly sliced (optional)
1 (15 oz) can kidney beans, rinsed and drained
1 (15 oz) can black beans, rinsed and drained
1 large tomato, diced
1 avocado, peeled and chopped
6 oz (1/2 cup) cheddar cheese, grated
1 - 2 cups tortilla chips

1 recipe Catalina salad dressing, recipe follows or bottled dressing
Sour cream, salsa can be served as toppings, if desired

Directions:

  1. Brown the ground turkey in a hot skillet and drain any fat.
  2. Add the taco seasoning and 3/4 cup water, cook over medium heat for 5 minutes.  Leave to cool.
  3. In a large bowl, combine the lettuce, carrot, onion, kidney beans, black beans, tomatoes, avocado,
    cheese and beef mixture.  Mix well.
  4. Just before serving, add the tortilla chips (crushed slightly) and enough dressing to coat.
    Mix well and serve.

 

Catalina Salad Dressing

Ingredients:

1/2 cup tomato ketchup
1/4 cup water
1/4 cup canola oil 
1/4 cup red wine vinegar 
1/4 cup sugar
1/2 teaspoon Dijon mustard
salt and pepper to taste

Directions:
Pour all the ingredients in a clean glass jar with a lid.  Shake well.  Store in refrigerator.
