  Sweet Potato Biscuits
Sweet potatoes are a good source of vitamin A and fiber.
(Makes 8)

Ingredients:
1 cup all purpose flour
3 teaspoons baking powder
2 teaspoons sugar
1/4 teaspoon salt
2 tablespoons butter, cut into 1/2 inch cubes
1 medium cooked sweet potato, peeled and mashed
1/4 cup milk


Directions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a medium bowl, whisk together flour, baking powder, sugar and salt.
  3. Add the butter and using fingertips, rub into the flour mixture until it resembles breadcrumbs.
  4. Mix in the the sweet potatoes and enough milk to make a soft dough.
  5. Turn dough onto a floured surface and pat gently with hands to 1/2 inch thickness.
  6. Cut out biscuits using a cookie cutter. Re-roll and cut out the remaining dough.
  7. Place on baking sheet and bake for 12 to 15 minutes or until golden brown.
