Sweet Potato Biscuits
Sweet potatoes are a good source of vitamin A
and fiber.
(Makes 8)
Ingredients:
1 cup all purpose flour
3 teaspoons baking powder
2 teaspoons sugar
1/4 teaspoon salt
2 tablespoons butter, cut into 1/2 inch cubes
1 medium cooked sweet potato, peeled and mashed
1/4 cup milk
Directions:
- Preheat oven to 400 degrees Fahrenheit.
- In a medium bowl, whisk together flour,
baking powder, sugar and salt.
- Add the butter and using fingertips, rub
into the flour mixture until it resembles breadcrumbs.
- Mix in the the sweet potatoes and enough
milk to make a soft dough.
- Turn dough onto a floured surface and
pat gently with hands to 1/2 inch thickness.
- Cut out biscuits using a cookie cutter.
Re-roll and cut out the remaining dough.
- Place on baking sheet and bake for 12 to
15 minutes or until golden brown.
