Individual Strawberry Trifles

(Makes 4)

Ingredients:
2 - 4 slices store bought angel food cake or pound cake
Raspberry jam
2 cups strawberries, washed, hulled and diced
1 tablespoon sugar
1 (3.5 ounce) package instant vanilla pudding mix
2 cups milk
1 cup heavy whipping cream or cool whip

Sprinkles for decoration
8 individual dessert glasses or plastic cups

Directions:

  1. Cut the cake into ˝ inch slices and spread half the slices with jam.  Cover with the remaining slices to makes jam ‘sandwiches’.
  2. Cut each sandwich into ˝ inch cubes and set aside.
  3. Sprinkle prepared strawberries with the tablespoon sugar, stir and set aside to macerate.
  4. Prepare the pudding mix according to directions using the 2 cups milk.
  5. Place a spoonful of cake into the bottoms of the four glasses.
  6. Then spoon a layer of fruit onto the cake, dividing the fruit equally between the glasses.
  7. Top with a layer of pudding, then repeat the layers ending with pudding.
  8. Finally top each glass with a layer of whipped cream or cool whip and decorate with sprinkles.
