Fresh Strawberry Muffins
Thanks to my neighbor Kristina for this
delicious recipe.
(Makes 12)
Ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup sugar
1/2 teaspoon salt
3/4 cup canola or vegetable oil
2 eggs, beaten
2 cups fresh strawberries, washed and hulled (1 cup mashed and 1 cup chopped)

Directions:
- Preheat oven to 350 degrees Fahrenheit.
- Line a 12-hole muffin tin with paper liners.
- Place the dry ingredients - flour, baking
soda, cinnamon, sugar and salt, in a large mixing bowl.
- Using a whisk, mix together until well
blended.
- Whisk together the wet ingredients - oil,
eggs and buttermilk, in a separate bowl.
- Add the wet ingredients and both mashed and chopped
strawberries to the bowl of dry ingredients.
- Mix with a wooden spoon until no more flour
can be seen.
- Fill the paper liners to the top with
mixture.
- Bake for 20 - 25 minutes or until golden
brown and springy to touch.
- Leave to cool on wire rack.
