Stained Glass Cookies

(Makes 28)
Hard colored candies melt in cut out cookies to make beautiful stained glass.

Ingredients:
1cup (½ pound) butter, soft
½ cup sugar
2 egg yolks
1 teaspoon vanilla
2 ½ cups all-purpose flour

Colored, hard candies

Directions:

  1. Preheat oven to 300 degrees Fahrenheit.
  2. In a large bowl, beat the butter and sugar with an electric mixer until smooth and creamy.
  3. Beat in the egg yolks and vanilla.
  4. Stir in the flour and beat until mixed.
  5. Divide the dough in half and flatten each portion with your hands to make a 1 inch round.
  6. With a floured rolling pin, roll each portion out to ¼ inch thick.
  7. Because stained glass cookies will stick to the pan, line baking pans with silicone baking pads
    or parchment paper.
  8. Then, cut out and lift designs from center of each cookie.  For example, a small star from the center of a larger star or a round.  Place on baking sheets 1 inch apart.
  9. To make stained glass:  Chop transparent, colored hard candies, such as lemon drops, cinnamon balls or other flavors, into ¼ inch pieces to make ¼ cup (or more as needed).
  10. Fill cut out portions of dough just to the rim with candy; use one color of candy in each cutout.
  11. Bake for 15 to 18 minutes until golden.  Let cookies cool on pans until candy is firm. 
    Slide a thin spatula under cookies to release.
