  Speedy Cinnamon Rolls
(Makes 8 buns)
This quick and easy recipe is perfect to make for breakfast.  This is not the traditional yeast recipe, but they
taste just as good.  They are best eaten the same day or fresh from the oven!

Ingredients:
Dough:  
1 1/4 cups all purpose flour
2 teaspoons baking powder
2 tablespoons sugar
4 tablespoons (1/2 stick) cold butter, cut into small pieces
1 large egg
1/4 cup milk
           
Filling:  
3 tablespoons sugar, 2 teaspoons cinnamon
1 - 2 tablespoons melted butter

Icing: 
1/2 cup confectioners sugar, 1 teaspoon milk

Directions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. To make the dough - Into a large mixing bowl, sift the flour, baking powder and sugar.
  3. Add the butter and rub the mixture between fingertips until it looks crumbly like breadcrumbs.
  4. In a small bowl, mix together the egg and milk and whisk with a fork.
  5. Add to the flour mixture, stirring until just combined.
  6. Turn onto a floured surface and gently knead, 3 or 4 times, until it forms a dough. 
    It will be slightly sticky, but do not add too much flour.
  7. Pat or roll out to 9 inch square. 
  8. In a small bowl, stir together the sugar and cinnamon to make the filling.  
  9. Brush the dough with the melted butter and sprinkle with the cinnamon sugar mix.
  10. Roll the dough evenly to form a log and cut crosswise into 8 pieces.
  11. Arrange the rolls on a baking sheet or cake tin, cut side up, with sides touching.  
    Press down to flatten the rolls a little.
  12. Bake in oven for 15 to 18 minutes until golden and cooked through.
  13. Prepare the icing by mixing the confectioners sugar and milk in a small bowl until smooth. 
    Drizzle over warm buns.
