Spaghetti "Pizza" Pie
The pasta forms a crust in this delicious pie, it's a different way to serve spaghetti and meat sauce.
Vegetarians may substitute ricotta cheese and spinach for the meat.
(Serves 6 - 8)

Ingredients:
Crust:
6 ounces spaghetti, cooked to package instructions
1/4 cup parmesan cheese
2 eggs, beaten

Filling:
1 tablespoon olive oil
8 ounces ground turkey/beef
1 small onion, peeled and finely diced
1 clove garlic, minced
2 cups marinara or spaghetti sauce
salt and pepper to taste
1/3 cup grated mozzarella cheese
Pepperoni or tomato slices for topping


Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Prepare crust:  Grease oven proof baking dish with non stick spray. 
  3. In a large bowl, toss spaghetti, parmesan cheese and beaten eggs until well mixed.
  4. Pour into baking dish and press firmly into the bottom and up the sides to form the "crust" of the pie.
  5. Prepare filling:  Heat olive oil in medium saucepan over medium heat.
  6. Add the ground turkey, onion and garlic and cook until the meat turns white and slightly browned.
  7. Add the marinara or spaghetti sauce and cook covered for a further 5 minutes.  Season to taste.
  8. Spoon meat sauce over spaghetti crust and sprinkle with mozzarella cheese.
  9. Top with pepperoni or tomato slices.
  10. Bake for 15 minutes until cheese if golden brown.
  11. Allow to sit for 5 minutes before serving.  Cut into wedges and serve.
