Spaghetti and Meatballs

This classic recipe is so easy and fun to
prepare with your kids. Make it a regular on your dinner table.
(Serves 4 - 6)
Ingredients:
Meatballs:
12 ounces extra lean ground beef
1 egg, beaten
1/4 cup grated Parmesan cheese
1/2 cup fresh bread crumbs*
2 tablespoons Italian parsley, finely chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Marinara Sauce:
2 tablespoons Olive oil
1 large onion, peeled and finely chopped
2 Cloves garlic, finely minced
2 tablespoons fresh basil
½ teaspoon dried oregano
32 oz. can plum
tomatoes
Salt and black pepper
1 pound spaghetti
Extra grated Parmesan cheese
Directions:
- Prepare
marinara sauce: In
a large pot, heat the olive oil over medium heat and add the
chopped onions. Cook
for 3 minutes, stirring occasionally to prevent burning.
- Add
the minced garlic, basil and oregano; continue cooking and
stirring for another 3 minutes.
- Pour
the tomatoes into a large mixing bowl and using clean hands break up into
small pieces. Add to
the onion mixture with ½ teaspoon salt and freshly ground pepper.
Simmer uncovered for approximately 30 minutes or until thickened.
- Prepare meatballs: Preheat oven
to 375 degrees Fahrenheit.
- Put the ground beef, egg, Parmesan cheese,
bread crumbs, parsley, salt and pepper in a
large mixing bowl.
- Combine the mixture thoroughly using
clean hands.
- With wet hands, roll 1-tablespoon
amounts of mixture into meatballs (about 20).
- Place on foil lined baking tray and bake for
15 minutes or until cooked through.
- Add cooked meatballs to marinara sauce and
simmer together for another 10 minutes.
- Cook spaghetti in boiling salted water as
directed on packet until al dente. Strain in colander.
- Serve spaghetti with meatballs and sauce and
offer grated Parmesan cheese at the table.
