Smashed Potatoes
Use any type of potato, but if you use
red skins, they don't need to be peeled!
(Serves 6) Ingredients:
2 1/2 pounds
red skinned potatoes, washed
3 tablespoons butter
1/2 cup half and half or whole milk
salt and pepper
Directions:
- Cut the potatoes in half
if they are too big. Put in a large pot, add cold water so it just
covers the potatoes.
- Bring to the boil, reduce
heat to medium, cover and cook until tender, about 15 minutes.
- Drain and return to the
pot to dry any remaining water. Remove from heat.
- Heat the half and half (or
milk) and butter in a small pan. Watch it carefully and remove from heat
when the butter has melted.
- Mash the potatoes using a
masher or a fork. Add the warmed cream and butter slowly and mix with
a wooden spoon until smooth and creamy. More cream or milk may be added if
you like.
Add salt and pepper to taste.
