Smashed Potatoes
Use any type of potato, but if you use red skins, they don't need to be peeled!
(Serves 6)

Ingredients:
2 1/2 pounds red skinned potatoes, washed
3 tablespoons butter
1/2 cup half and half or whole milk
salt and pepper

Directions:

  1. Cut the potatoes in half if they are too big.  Put in a large pot, add cold water so it just covers the potatoes.
  2. Bring to the boil, reduce heat to medium, cover and cook until tender, about 15 minutes.
  3. Drain and return to the pot to dry any remaining water. Remove from heat.
  4. Heat the half and half (or milk) and butter in a small pan. Watch it carefully and remove from heat when the butter has melted.
  5. Mash the potatoes using a masher or a fork.  Add the warmed cream and butter slowly and mix with a wooden spoon until smooth and creamy. More cream or milk may be added if you like. 
    Add salt and pepper to taste.
