Homemade Rice-a-Roni
This recipe uses all pantry ingredients and tastes even better than the box!

Ingredients:
1 tablespoon canola oil
1/2 cup spaghetti, broken into 1/2 inch pieces
1/2 small onion. peeled and diced
1 cup long grain rice, washed and drained
2 cups low sodium chicken broth


Directions:

  1. Heat the oil in a medium pot (with lid) over medium high heat.  Add the spaghetti and onion, stir constantly until lightly browned.
  2. Add the rice and mix into the spaghetti, stirring well.
  3. Pour in the broth and bring to the boil.
  4. Turn heat down to low, cover with lid and cook for 20 minutes.
  5. Fluff with fork and serve.
