Creamy Parmesan Polenta
Polenta is cornmeal and is a great alternative to rice or pasta.
(Serves 4)

Ingredients:
3 cups water
3/4 cup instant polenta
3/4 - 1 cup freshly grated Parmesan cheese
1 tablespoon butter

Directions:

  1. Bring water to a boil in a 2-quart saucepan and slowly add polenta, whisking constantly.
  2. Cook polenta over a moderate heat, whisking constantly for 5 minutes.
  3. Remove from heat and whisk in cheese, butter and salt and pepper to taste.
  4. Serve immediately.
