Shepherd's Pie Jackets

(Serves 4)
Your kids will love this version of an old favorite.


Ingredients:

4 baking potatoes

1 pound lean ground beef or turkey
1 medium onion, chopped
splash Worcestershire sauce
1/2 cup canned beef stock
1 tablespoon tomato paste
Salt and pepper
1/2 cup green peas, thawed
1/4 -1/2 cup milk
2 tablespoons butter
2 ounces Cheddar cheese, grated

Directions:

  1. Scrub the potatoes clean, dry them well and prick all over with a fork.

  2. Bake in a preheated oven at 375 degrees for 45 minutes to an hour or until cooked through or microwave
    for approx 20 minutes.

  3. Meanwhile cook the ground beef and onions in a pan for 10 minutes until the onions are golden and the
    meat has lost its pink color.

  4. Stir in the Worcestershire sauce and cook for 1 minute.

  5. Add the beef stock and tomato paste, then cover and simmer for 10 minutes until the meat is cooked through.  Season with salt and pepper to taste.

  6. Stir in green peas. 

  7. When the potatoes are cool enough to handle, cut them in half lengthwise.  Scoop out the flesh into a
    bowl, leaving a thin layer and trying not to break the skin.

  8. Mash the potato with a fork or fingers, stir in the butter and milk until smooth and creamy.  Add salt and pepper to taste.

  9. Put the potato skins in shallow baking dish and spoon in the meat mixture.  Top with the mashed
    potatoes and sprinkle with the cheese. 

  10. Return to the oven for another 15 -20 minutes until the cheese has melted and the potato filling is hot. 
    Serve with steamed green veggies.
