Shepherd's
Pie Jackets
(Serves 4)
Your kids will love this version of an old favorite.
Ingredients:

4
baking potatoes
1 pound lean ground beef or turkey
1 medium onion, chopped
splash Worcestershire sauce
1/2 cup canned beef stock
1 tablespoon tomato paste
Salt and pepper
1/2 cup green peas, thawed
1/4 -1/2 cup milk
2 tablespoons butter
2 ounces Cheddar cheese, grated
Directions:
-
Scrub
the potatoes clean, dry them well and prick all over with a fork.
-
Bake
in a preheated oven at 375 degrees for 45 minutes to an hour or until cooked
through or microwave
for approx 20 minutes.
-
Meanwhile
cook the ground beef and onions in a pan for 10 minutes until the onions are
golden and the
meat has lost its pink color.
-
Stir
in the Worcestershire
sauce and cook for 1 minute.
-
Add
the beef stock and tomato paste, then cover and simmer for 10 minutes until
the meat is cooked through. Season with salt and pepper to taste.
-
Stir in green peas.
-
When
the potatoes are cool enough to handle, cut them in half lengthwise.
Scoop out the flesh into a
bowl, leaving a thin layer and trying not to
break the skin.
-
Mash
the potato with a fork or fingers, stir in the butter and milk until smooth
and creamy. Add salt and pepper to taste.
-
Put
the potato skins in shallow baking dish and spoon in the meat mixture.
Top with the mashed
potatoes and sprinkle with the cheese.
-
Return
to the oven for another 15 -20 minutes until the cheese has melted and the
potato filling is hot.
Serve with steamed green veggies.
