Valentine Cut-out Sandwich Cookies

Use this butter cookie dough to make elegant cookies for Valentine or be creative and use your choice of cutter.

Ingredients:
2 sticks (8 oz) butter, softened
1 cup sugar
1 whole egg, plus 1 egg yolk
2 teaspoons vanilla
2 1/2 cups all-purpose flour

1 cup seedless raspberry preserves
1/3 cup confectioners' sugar

Directions:

  1. In a large bowl, cream the butter and sugar with an electric mixer until light and creamy.
  2. Add the egg yolk and beat well.
  3. Next, add the whole egg and vanilla and continue beating.
  4. Using a wooden spoon, gradually mix in the flour until flour is just mixed in.  Do not over mix.
  5. Divide into two discs and wrap each in plastic wrap.
  6. Preheat oven to 350 degrees F. On lightly floured surface, with floured rolling pin, roll one-half of dough 1/8 inch thick, keeping remaining dough refrigerated.
  7. With floured 3 or 4 inch heart-shaped cookie cutter, cut dough into as many hearts as possible.
    Place hearts, 1/2 inch apart, on parchment lined cookie sheets. Reserve trimmings.
  8. With floured 1 1/2-inch heart-shaped cookie cutter, cut out centers from half of hearts. Remove cutout
    centers, and reserve along with the trimmings.  Re-roll, cut and bake more cookies if desired.
  9. Bake cookies 10 to 12 minutes until lightly browned.  Remove cookies to wire racks to cool.
  10. When cookies are cool, carefully sift cookies with cutout centers with confectioners' sugar.
  11. Spread each cookie without cutout center with 1 rounded teaspoon raspberry preserves; top each with a cookie with a cutout center, gently pressing cookies together to form a sandwich.
