  Pumpkin, Chocolate Chip Cookies
Try baking this fun cookie recipe for your 'trick or treaters' this Halloween.
(Makes approx. 24)

Ingredients:                
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon

1 cup (2 sticks) unsalted butter, soft
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup canned pumpkin
Orange food coloring
1 cup chocolate chips


Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Sift the flour, baking soda and cinnamon into a medium bowl.
  3. In a large mixing bowl, use an electric hand mixer to cream together the butter and two kinds of sugar,
    until light and creamy.
  4. Add the egg and vanilla, continue to mix until well combined.
  5. Slowly and carefully, mix the flour mixture into the creamed mixture.
  6. Add the pumpkin and then the orange food coloring a few drops at a time until the cookie dough turns
    a bright orange pumpkin color.
  7. Finally mix in the chocolate chips.
  8. Take a spoonfuls of cookie dough and roll into small balls.  Place onto greased cookie sheet 2 inches apart.
  9. Flatten each cookie slightly with a floured hand. 
    (Alternatively, omit step 7 and decorate plain cookie dough with chocolate chips.  Make faces, initials, patterns etc.)  
  10. Bake for 12 - 14 minutes until light golden, do not over bake.
  11. Transfer baked cookies after 5 minutes to wire rack to cool.
