Pumpkin, Chocolate Chip Cookies
Try baking this fun cookie recipe for
your 'trick or treaters' this Halloween.
(Makes approx. 24)
Ingredients:

2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1
cup (2 sticks) unsalted butter, soft
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup canned pumpkin
Orange food coloring
1 cup chocolate chips
Directions:
- Preheat oven to 350 degrees Fahrenheit.
- Sift the flour, baking soda and cinnamon
into a medium bowl.
- In a large mixing bowl, use an electric
hand mixer to cream together the butter and two kinds of sugar,
until
light and creamy.
- Add the egg and vanilla, continue to mix
until well combined.
- Slowly and carefully, mix the flour
mixture into the creamed mixture.
- Add the pumpkin and then the orange food
coloring a few drops at a time until the cookie dough turns
a bright
orange pumpkin color.
- Finally mix in the chocolate chips.
- Take a spoonfuls of cookie dough and roll
into small balls. Place onto greased cookie sheet 2 inches apart.
- Flatten each cookie slightly with a
floured hand.
(Alternatively, omit step 7 and decorate plain cookie dough with
chocolate chips. Make faces, initials, patterns etc.)
- Bake for 12 - 14 minutes until light
golden, do not over bake.
- Transfer baked cookies after 5 minutes to
wire rack to cool.
