Porcupine Meatballs

The rice in the meatballs stick out during cooking resembling Porcupines. The tasty tomato sauce is delicious served with mashed potatoes, noodles and a green vegetable.
(
Serves 4 - 6)

Ingredients:
1 pound lean ground beef or turkey

1 egg, lightly beaten
1/2 cup white long grain rice
1/2 medium onion, grated or finely chopped
1 small clove fresh garlic, grated
1 tablespoon fresh parsley, chopped finely (optional)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
 
1 bottle marinara sauce
1 cup water


Directions:

  1. Place the ground beef in a large bowl.
  2. Mix in the egg, rice, onion, garlic, parsley, salt and pepper. 
  3. Stir the ground beef and mix well with hands or large spoon.
  4. Using a tablespoon full of mixture, roll into round meatballs. Wet your hands in a small bowl of water to
    stop the meatball mixture from sticking.  Set aside.
  5. In a medium saucepan, combine marinara sauce with 1 cup water and stir until smooth. Add the meatballs, cover with a lid and cook for 15 minutes or until meatballs are cooked.
    Leave meatballs to stand covered for 5 minutes.
  6. Serve.
