Home-made Pop Tarts
These home-made tarts taste much better than the store bought ones.
(Makes 6)

Ingredients:
Cream cheese tart dough:
1 1/2 cups all-purpose flour
1/4 teaspoon salt
2 tablespoon sugar
8 tablespoons (1 stick) cold butter, cut into 1/2 inch cubes
4 ounces cream cheese, cut into 1/2 inch cubes
4 - 5 tablespoons iced water

Filling:
1 cup of your favorite jam

Frosting:
1 cup confectioner's sugar
2 tablespoons milk
Sprinkles


Directions:

  1. Prepare tart dough:  Place flour, salt and sugar in a large mixing bowl. Add butter and cream cheese,
    then using fingertips, rub into the flour until the mixture resembles breadcrumbs or tiny peas. You may
    use a food processor for this step.
  2. Add the water and stir together with fork, then squeeze it together until the mixture forms a ball.
  3. Press the ball into a flat disc, divide into 6 equal pieces.
  4. Preheat oven to 400 degrees Fahrenheit.
  5. Assemble: On a floured work surface, roll out each piece of dough into a rectangle approx. 8"x 6" (inches).
  6. Spread jam over half of the dough, leaving a one inch border on 3 sides.
  7. Fold the dough in half to make a smaller rectangle, matching up the edges.
  8. Press the edges down the tines of a fork.  Cut off the rough edges with a knife to make straight lines. 
    Prick top several times with the fork.
  9. Transfer to parchment lined baking sheet and bake for 15 - 20 minutes until golden brown.
  10. Leave to cool on wire rack. 
  11. Prepare frosting:  Stir milk into the confectioner's sugar, 1 teaspoon at a time, until a smooth, thick paste
    is formed.  Spread frosting onto each pop tart, try using a pastry brush and top with sprinkles.
