  Pecan Pie Bars
You don't have to wait for Thanksgiving to have Pecan pie anymore!

Ingredients:
Crust:
1 cup all purpose flour
1/4 teaspoon baking powder
4 tablespoons (1/2 stick) unsalted butter
1/3 cup light brown sugar

Pecan filling:
2 large eggs
1/4 cup light brown sugar
3/4 cup light or dark corn syrup
2 tablespoons all purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
3/4 cup chopped pecans

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Line a 9 x 9 x 2-inch baking pan with parchment paper or foil.  Leave an overhang on opposite ends to allow for easy removal.  Grease paper with non stick spray.
  3. Prepare crust:  Cut butter into 1/2-inch pieces.
  4. In a food processor, process all ingredients until mixture begins to form small lumps.
  5. Sprinkle mixture into the pan and press evenly onto the bottom.
  6. Bake for about 10 minutes or until very lightly browned. Remove from oven and place on a wire rack to cool while you make the filling.
  7. Pecan Filling: In a large bowl whisk or beat the eggs until foamy. Add the brown sugar, corn syrup, flour, salt, and vanilla and whisk until combined.
  8. Pour over the baked crust and then sprinkle with the chopped pecans.
  9. Bake for about 25 - 30 minutes or until firm and nicely browned. Let cool in the pan and then cut into squares. Store at room temperature or in the refrigerator.
