Parmesan Biscuit Weave Mats
We use the buttery, garlic biscuit recipe for this fun activity - perfect for a rainy day.

(Makes 2)

Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons vegetable shortening or butter
1/2 cup grated Cheddar cheese
1/4 teaspoon Italian seasoning (optional)
1 cup milk

1/4 cup melted butter
1/2 cup parmesan cheese

Directions:

  1. Preheat oven to 425°F. 
  2. Whisk flour, baking powder and salt in large bowl to blend.
  3. Using fingertips, rub the shortening or chilled butter into dry ingredients until the size of small peas. 
  4. Stir in cheese and seasoning.
  5. Add milk and stir until evenly moistened and forms a dough.
  6. Divide the dough into 2 equal parts to make 2 mats. Divide each piece
    into half, then each half into 3 equal pieces - makes 6.
  7. Roll each of the 6 pieces into a 'snake' measuring approximately 4 inches.  Set aside.
  8. On a clean working surface, assemble the mat weaving a lattice and alternating the  'snakes'.       
    Pull together tightly trying not to break the dough.  
  9. Brush mats with melted butter and sprinkle with parmesan cheese.
  10. Transfer the Weave Mats to a baking sheet and bake for about 20 minutes, or until golden all over.
    Transfer to a rack to cool..
