Oven Fried Chicken Strips
(4 - 6 servings)
Ingredients:
1 1/4 cups buttermilk
1/4 cup canola oil
1 tablespoon Dijon mustard
salt and pepper
2 cups breadcrumbs (store bought works
best)
1/2 cup grated Parmesan cheese
4 skinless boneless chicken breast halves
Directions:
- Preheat oven to 450 degrees and line a baking
sheet with foil.
- In a large bowl whisk together the buttermilk,
oil and mustard. Add salt and pepper to taste.
- Pat chicken dry and cut into strips.
- Add the chicken to the buttermilk mixture and
turn to coat evenly.
- Mix the 2 cups breadcrumbs and parmesan cheese
and pour into a large brown bag.
- Transfer the chicken strips from the marinade
to the brown bag and shake well to coat in the breadcrumbs.
- Arrange chicken, without crowding, on the
baking sheet.
- Bake chicken in middle of oven until cooked
through and golden, 15 - 20 minutes.
