Oven Fried Chicken Strips

(4 - 6 servings)

Ingredients:
1 1/4 cups buttermilk
1/4 cup canola oil
1 tablespoon Dijon mustard
salt and pepper
2 cups breadcrumbs (store bought works best)
1/2 cup grated Parmesan cheese 
4 skinless boneless chicken breast halves 

Directions:

  1. Preheat oven to 450 degrees and line a baking sheet with foil. 
  2. In a large bowl whisk together the buttermilk, oil and mustard.  Add salt and pepper to taste.
  3. Pat chicken dry and cut into strips.
  4. Add the chicken to the buttermilk mixture and turn to coat evenly.
  5. Mix the 2 cups breadcrumbs and parmesan cheese and pour into a large brown bag.
  6. Transfer the chicken strips from the marinade to the brown bag and shake well to coat in the breadcrumbs.
  7. Arrange chicken, without crowding, on the baking sheet.
  8. Bake chicken in middle of oven until cooked through and golden, 15 - 20 minutes.
