Moo Shoo Pork
A popular Chinese dish where the stir fry meat and veggies are wrapped in a warm tortillas.
(Serves 4 - 6)

Ingredients:
2 tablespoons vegetable oil
1/2 pound pork loin, thinly sliced
1/2 teaspoon grated fresh ginger root
1 clove minced garlic
2 cups finely shredded vegetables, e.g., cabbage, scallions, carrot, red/green peppers or precut coleslaw mix
1 cup bean sprouts
4 tablespoons soy sauce
1 teaspoon cornstarch mixed with 1 tablespoon water.
3 green onions, sliced

1 package (10 oz.) flour tortillas (fajita size)
Hoisin sauce

*Hoisin sauce is available in Asian markets and in the specialty section of many supermarkets

Directions:

  1. Heat 1 tablespoon oil in a medium non-stick skillet over high heat.  Add the sliced pork and stir quickly
    until the meat is no longer pink.  Transfer meat to separate plate.
  2. Add the 1 tablespoon oil, ginger and garlic to the skillet.  Stir fry for one minute then, add the vegetables, bean sprouts and soy sauce.  Cook for 3 – 4 minutes until vegetables are crisp tender.
  3. Add the cornstarch and water and cook until sauce thickens.
  4. Return pork to skillet and cook 1 minute more. Transfer to serving bowl and sprinkle with green onions.
  5. Wrap tortillas in paper towel and microwave on High 1 1/2 minutes.
  6. To serve, spread Hoisin sauce on tortillas, spoon on Moo Shoo Pork and roll up.
