Turkey Meatloaf "Muffins"
Try this healthier
version of meatloaf, you won't miss the beef and they cook in just 20
minutes!
(Makes 12)
Ingredients:
1 small onion, peeled
1 clove garlic, peeled
1 medium carrot, peeled and sliced
4 or 5 mushrooms, cleaned
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 lb ground turkey
1 teaspoon Worcestershire sauce
1/3 cup finely chopped fresh parsley, optional
1/3 cup ketchup
1 cup fine bread crumbs
1/4 cup milk
1 large egg
Directions:

Preheat oven to 425°F.

Put onion and garlic, carrot and mushrooms in a food processor and pulse
until they are finely chopped.

Heat oil in a 12-inch nonstick skillet over moderate heat, add the
minced vegetables and cook until
softened, about 2 minutes.

Add 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, stirring
occasionally, until liquid mushrooms
give off is evaporated and they are
very tender. Transfer vegetables to a large bowl to cool.
- Put the ground turkey
in a big bowl,
stir in Worcestershire sauce, parsley, and 3 tablespoons ketchup.

Lightly whisk eggs and milk in a small bowl, add to the meat and stir in
the bread crumbs.

Finally add the cooled vegetables
and remaining 1/2
teaspoon salt and 1/4 teaspoon pepper.

Mix well with your hands or spoon. (Mixture will be very moist.)

Spray a 12 hole muffin tin with non stick spray. Fill each hole with
the meat mixture and press down
on each one.

Brush meatloaf evenly with remaining 2 tablespoons ketchup. Bake in
middle of oven until thermometer inserted into meatloaf registers 170°F
or 20 - 25 minutes.

Let meatloaf muffins stand for 5 minutes before serving.
