Meatball Chili
Make your favorite batch of bean chili and add
meatballs for a fun and easy meal.
(Serves 4 - 6)
Ingredients:
Meatballs:
12 ounces ground turkey or beef
1 egg, beaten
1/2 cup plain bread crumbs
1/4 teaspoon freshly grated or ground nutmeg
Chili:
2 tablespoons olive
oil
1 small onion, cut into dice
1 small green bell pepper, cut into dice
1 - 2 cloves garlic, minced or grated
1/4 - 1/2 teaspoons chili powder, or to taste
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1 (28 ounce) canned tomatoes (crushed or diced)
2 tablespoons tomato paste
2 cups low sodium chicken broth
1 (15 ounce) kidney beans or black beans, drained and rinsed
2 tablespoons fresh cilantro, chopped (optional)
Directions:
- Prepare meatballs: Preheat oven
to 375 degrees Fahrenheit.
- Put the ground turkey or beef, egg,
bread crumbs, parsley, salt and pepper in a
large mixing bowl.
- Combine the mixture thoroughly using
clean hands.
- With wet hands, roll 1-tablespoon
amounts of mixture into meatballs (about 20).
- Place on foil lined baking tray and bake for
15 minutes or until cooked through.
- While the meatballs are baking - In a large heavy pot, heat oil over medium heat,
add the onion, bell
pepper and garlic and continue to
cook for 5 - 10 minutes.
- Add the tomatoes with juice, tomato paste, broth and beans.
- Stir in the chili powder (amount depending on taste),
cumin, oregano and salt.

Bring to the boil, and then reduce heat to a simmer
uncovered until chili thickens, stirring occasionally,
about 20 minutes.
- Add
the cooked meatballs to the pot and cook for another 10 minutes.
- Stir in the cilantro, adjust seasoning and serve.
