Maple Leaf Scones
Look for a maple leaf cookie cutter to
get leaf shaped scones.
Ingredients:
Scones:
1/4 cup buttermilk
2 eggs
1/4 cup maple syrup
1 3/4 cups all-purpose flour
1/2 cup whole wheat flour
1/2 cup quick cooking oats
1 tablespoon baking powder
1 teaspoon salt
2 tablespoons sugar
1 stick butter, cut into 1/2 inch cubes
1/2 cup chopped walnuts (optional)
Maple glaze:
2/3 cup confectioner's sugar
1/4 cup maple syrup

Directions:
- Preheat oven to 425 degrees Fahrenheit.
- Prepare scones: In a small bowl,
whisk together the wet ingredients - buttermilk, eggs and maple syrup.
Set
aside.
- In a large bowl, using a whisk,
combine the dry ingredients: - all purpose flour, whole wheat flour, oats,
baking powder, salt and sugar.
- Add the butter to the flour mixture and
using finger tips, rub into the flour until the mixture resembles
breadcrumbs.
- Add the egg mixture and walnuts (if using
them). Mix until a dough starts to form.
- Turn the sticky mixture onto a clean,
floured surface. Knead the dough 2 or 3 times until it comes together.
- Roll the dough gently to 1 inch thickness.
- Cut out leaf shapes and place onto a baking
sheet lined with parchment paper.
- Bake for 15 - 20 minutes or until golden
brown.
- Cool scones on wire rack.
- Prepare glaze: In a small bowl, mix
together the confectioner's sugar and maple syrup.
- When scones are cold, spread tops with maple
glaze.
