Lemon-Ricotta Pancakes
(Serves 4)

Ingredients:

Pancakes:
3 whole eggs, separated
3/4 cup ricotta cheese
1/2 cup milk
3/4 cup all-purpose flour
1 tablespoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
1 teaspoon grated lemon zest

Garnish:
Powdered sugar and sliced strawberries or bananas
Maple syrup

Directions:

  1. In a large bowl, combine egg yolks, ricotta, and milk.

  2. In another bowl, whisk together the flour, baking powder, sugar, salt, and lemon zest.

  3. Slowly add the flour to the cheese mixture.

  4. Whisk the egg whites to form firm peaks, then fold gently into batter.

  5. Lightly butter a griddle or Teflon pan. Spoon out small cakes and cook until golden brown.

  6. Top with powdered sugar and sliced strawberries or bananas.  Serve with maple syrup.
