Italian Pasta Salad
Your kid's will definitely eat their veggies if you serve this salad for dinner.
(Serves 6 - 8)

Ingredients:
1 pound rotini or bowtie pasta
1 pound Cherry or grape tomatoes
1 small zucchini, sliced
1 head broccoli, cut into florettes and blanched
1/2 small red onion, diced (optional)
1/2 cup drained chopped black olives, halved
2 ounces salami, sliced
2 ounces ham, sliced
2 ounces mozzarella cheese, cut into small dice
8 leaves basil, thinly sliced

 
1 cup grated Parmesan cheese 
1 cup salad dressing (recipe follows)

Directions:

  1. Cook the pasta, according to directions. Drain thoroughly and transfer to a large mixing bowl.

  2. Add dressing to hot pasta; toss to coat. Cool, stirring occasionally.

  3. Add sliced zucchini, broccoli, tomatoes, onions, olives, salami, ham, mozzarella, basil and Parmesan; toss. 

  4. Season to taste with salt and pepper. (Can be made 6 hours ahead.) Cover; chill.
    Bring to room temperature before serving.
