  Ham and Vegetable Frittata
A frittata is just another name for an omelet baked in the oven!  Leave out the ham for a veggie frittata.
(Serves 4 - 6)

Ingredients:
3 teaspoons olive oil

1 small onion, peeled and finely diced
1/2 small  red or green bell pepper, seeded and diced
1 clove minced garlic
1 cup mushrooms, thinly sliced
1 small red skinned potato, washed and diced
1 cup cooked asparagus, cut in small pieces
1/2 teaspoon pepper
1/4 teaspoon salt

1 cup cooked ham, cut in small dice
6 eggs, beaten
1/4 cup Cheddar cheese, grated


Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a 10-inch nonstick, ovenproof skillet, add 2 teaspoons olive oil and sauté onion, bell pepper  garlic, mushrooms, potato and asparagus for 5 to 6 minutes on medium heat until potatoes are almost cooked.
  3. Season with pepper and salt.
  4. Transfer mixture to a medium bowl and add the ham and eggs.
  5. Wipe out pan with kitchen paper and add the remaining olive oil to the skillet. Set over medium-low heat
    and pour the egg mixture into pan.
  6. Cook 5 to 6 minutes, or until the eggs are set on the bottom and lightly browned.
  7. Sprinkle cheese over top and bake in oven for approx. 10 - 15 minutes, or until the mixture is set
    and cheese is brown and bubbly.
