Ham and Egg Strata
A delicious and easy breakfast casserole baked in the oven. 
(Serves 6)

Ingredients:
1 1/2 cups French bread, cut into 1 inch cubes
1/2 lb. cooked ham, cubed
1 8-oz. pkg. frozen chopped spinach, thawed and drained
12 cherry tomatoes, sliced in half
6 oz. Cheddar cheese, shredded
8 eggs
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 tsp. pepper
1 cup milk

Directions:

  1. Preheat the oven to 375° Fahrenheit.

  2. Butter a 13 x 9 x 2-inch baking dish and line the bottom with the bread cubes.

  3. Cover with a layer of ham cubes, a layer of chopped spinach, a layer of cherry tomatoes,
    and finally, shredded cheese.

  4. In a separate mixing bowl, whisk the eggs, mustard, pepper and milk together.

  5. Pour this mixture over the casserole and press down with a spatula to allow mixture to soak into bread.

  6. Bake for 20 minutes and the cheese turns golden brown.
