Fresh fruit and Yogurt Parfaits
This layered dessert looks best served in
glass or clear plastic containers.
(Serves 4)
Ingredients:
Assorted fruits in season (apples, pears, pineapple, strawberries, grapes, melon, kiwi, bananas etc)
4 x 8 ounce containers favorite fruit, plain or vanilla yogurt
1 cup low fat granola
Directions:
- Wash and dry the fruits you have chosen.
- If you are using apples, apricots, cherries,
peaches, pears or plums, cut the fruits in half with a paring knife. Remove
the seeds and cores with a melon baller and discard.
- If you are using bananas, melons or oranges,
remove and discard the peels or rinds.
- If you are using strawberries, cut off the
green stems.
- With a paring knife, dice enough fruit to
measure 2 cups.
- Using a spoon, put half the yogurt equally
into 4 parfait/sundae glasses.
- Next, spoon half the fruit on top of the
yogurt. Then spoon half the granola on top of the fruit.
- Repeat this step
with the remaining yogurt, fruit and granola.
- Refrigerate if necessary and serve.
