Fresh fruit and Yogurt Parfaits
This layered dessert looks best served in glass or clear plastic containers.
(Serves 4)

Ingredients:
Assorted fruits in season (apples, pears, pineapple, strawberries, grapes, melon, kiwi, bananas etc)
4 x 8 ounce containers favorite fruit, plain or vanilla yogurt
1 cup low fat granola

Directions:

  1. Wash and dry the fruits you have chosen.
  2. If you are using apples, apricots, cherries, peaches, pears or plums, cut the fruits in half with a paring knife.  Remove the seeds and cores with a melon baller and discard.
  3. If you are using bananas, melons or oranges, remove and discard the peels or rinds.  
  4. If you are using strawberries, cut off the green stems.
  5. With a paring knife, dice enough fruit to measure 2 cups.
  6. Using a spoon, put half the yogurt equally into 4 parfait/sundae glasses.
  7. Next, spoon half the fruit on top of the yogurt.  Then spoon half the granola on top of the fruit. 
  8. Repeat this step with the remaining yogurt, fruit and granola.
  9. Refrigerate if necessary and serve.
