Fresh Fruit Cookie Pizza

A fun dessert idea with a sugar cookie base topped with fresh fruit.
(Serves 6 -8)

Ingredients:                   
Sugar Cookie:                   
1 stick (4 oz) butter, soft
1/2 cup sugar
1 whole egg
1 teaspoon vanilla
1 1/4 cups all-purpose flour

Cream cheese frosting:
4 ounces (1/2 package) light cream cheese
1/2 cup confectioners sugar

2 -3 cups prepared fruit, e.g. fresh bananas, pineapple chunks, grapes, mandarin oranges, kiwi, blueberries, strawberries and peaches.
Shredded coconut may be sprinkled on top.

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream the butter and sugar with an electric mixer until light and creamy.
  3. Next, add the egg and vanilla and continue beating.
  4. Using a wooden spoon, gradually mix in the flour until flour is just mixed in.  Do not over mix.
  5. Place cookie dough on a piece of parchment paper at least 12 inches square.  Roll out to a large circle.
  6. Transfer paper to a cookie sheet and bake cookie pizza for 15 to 20 minutes or until lightly browned. 
    Cool completely on wire rack.
  7. Mix together cream cheese and sugar until soft and creamy
  8. Spread cream cheese mixture over cooled cookie dough crust. Arrange fruit over "pizza" and serve immediately.
