Fried Worms
This is really home-made pasta, but
looks like worms when boiled and cooked in butter.
Ingredients:
2 cups unbleached flour, approx
2 large eggs
1/4 teaspoon salt
2- 4 tablespoons warm water
2 tablespoons butter
Directions:
- Make the dough: In a large mixing
bowl, whisk together the flour and salt.
Make a well in the center.
- In a small bowl, beat the eggs and water.
- Pour the egg mixture into the flour.
Mix together with a fork until a ball forms.
- Turn out onto a floured work surface or
board and knead with hands until smooth, adding more flour if the dough is
sticky.
- Wrap the dough in plastic wrap and leave to
rest for 30 minutes to 1 hour.
- Make worms: Cut the dough in
half and roll each into a log.
- Cut each log into
narrow strips and roll each strip between hands to make long "worms".
Spread out the "worms" on a floured baking sheet and
leave to dry.
- Cook pasta in pot of boiling salted water
until just tender, stirring occasionally, approx. 5 to 8 minutes. Drain.
- Melt butter in frying pan over medium heat,
add the pasta and cook until light brown.
- Serve with marinara sauce.
