Dessert Nachos with Fresh Fruit Salsa

The salsa can be made with any sweet, ripe fruit in season.
(Serves 6)

Ingredients:
Fruit Salsa:
1/2 cup kiwi, peeled and cut into 1/2 inch dice
1/2 cup cantaloupe, peeled and cut into 1/2 inch dice
1/2 cup strawberries, cut into 1/2 inch dice
1/2 cup banana, peeled and cut into 1/2 inch dice
2  tablespoons sugar or to taste
1/4 cup orange juice

2 cups low fat plain or vanilla yogurt
6 x (7 inch) flour tortillas
Butter flavored cooking spray
2 tablespoons sugar
1/2 teaspoons cinnamon

Directions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Combine ingredients for fruit salsa in small bowl.  Cover and chill.
  3. Cut each flour tortilla into 8 wedges, scissors may be used. Place on ungreased baking sheet.
  4. Generously spray tortilla wedges with cooking spray. Stir together sugar and cinnamon .
    Sprinkle over tortilla wedges.
  5. Bake 7 to 9 minutes or until lightly browned; cool completely.
  6. Place tortilla wedges on small plates. Drizzle yogurt on top. Sprinkle with fresh fruit salsa.
    Serve immediately.
