  Cranberry Oat Scones
(Makes 8)

Ingredients:
1 3/4 cups all-purpose flour
1/3 cup sugar
1/4 teaspoon salt
3/4 teaspoon baking soda
1 teaspoon baking powder
1 stick unsalted butter, cold and cut into 1/2 inch dice
3/4 cup old fashioned rolled oats
1/3 cup dried cranberries
zest of 1 lemon or orange
2/3 cup buttermilk, plus 1/4 cup extra to brush tops


Directions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a large mixing bowl, sift or whisk together the flour, sugar, salt, baking soda and baking powder.
  3. Add the butter and using fingertips, rub into the flour mixture until it resembles coarse crumbs. 
  4. Add the rolled oats, dried cranberries and zest.  Mix until combined. 
  5. Stir in the buttermilk (adding more buttermilk if necessary) and mix just until the dough comes together.
  6. Transfer to a lightly floured surface and knead the dough four or five times and then pat, or roll, the dough
    into a circle that is 7 inches round and about 1 1/2  inches thick. 
  7. Cut this circle into 8 triangular sections. 
  8. Place the scones onto baking sheet.   Brush the tops of the scones with the extra buttermilk. 
    Sprinkle with sugar if desired.
  9. Bake for about 15 - 18 minutes or until lightly browned and a toothpick inserted in the middle comes
    out clean.  Transfer to a wire rack to cool.
