  Cornbread Muffins
(Makes 12 muffins)

Ingredients:
3/4 cup cornmeal
1 cup all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg, beaten
2 tablespoons canola or vegetable oil

Directions:

  1. Preheat oven to 425 degrees F.  Spray 12- hole muffin tin with non-stick spray.
  2. In a medium bowl, whisk together the dry ingredients: cornmeal, flour, sugar, baking powder and salt .
  3. In a separate bowl, whisk together the wet ingredients: milk, egg and oil.
  4. Stir the egg mixture into the flour mixture.  Mix until well blended.
  5. Divide the mixture into the prepared muffin tins and bake for 12 - 15 minutes or until golden brown.
  6. Serve warm.
