  Baked Cinnamon "Churros"
(Makes about 12)

Ingredients:
1 1/2 cup all-purpose flour
1/2 cup whole -wheat flour
1/4 cup sugar
1 tablespoon
baking powder
Pinch of salt
6  tablespoons cold unsalted butter, cut into 1/2 inch dice
3/4 cup half and half

3 tablespoons sugar + 1 teaspoon cinnamon mixed in a small bowl

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Place the all purpose flour, whole-wheat flour, sugar, baking powder and salt into a large bowl. 
    Mix them together well using a whisk.
  3. Add the butter and using fingers, rub the butter into the flour mixture until it resembles breadcrumbs.
  4. Add the cream and mix with a wooden spoon until it forms a dough.
  5. Divide the dough into 12 equal pieces.
  6. Roll each piece into a 'snake' measuring approximately 4 inches.  Set aside.
  7. Toss the snakes into the bowl of cinnamon/sugar mix, ensuring they are coated evenly. 
  8. Bake the "churros" on a baking sheet for about 20 minutes, or until golden all over. Transfer to a rack
    and allow to cool for at least 15 minutes.
