Classic Cinnamon Buns Ingredients:
Starter:
1 tablespoon dried yeast
1 cup warm milk, warm
1 cup all-purpose flour
Dough:
2 tablespoons butter
1/2 cup water, warm
1 egg, lightly beaten
1 teaspoon salt
1/2 cup sugar
1 whole wheat flour
2 1/2 - 3 cups all-purpose flour
Filling:
3/4 cup sugar
2 tablespoons cinnamon
1/2 stick butter, melted
Frosting:
4 oz cream cheese, softened
2 tablespoons butter, softened
1 cup confectioners sugar
Directions:
- Prepare the starter: Mix the yeast and 1
cup of all-purpose flour in the warm water in a large mixing bowl
until smooth. Cover with plastic wrap and set aside until bubbles
appear on the surface.
- Meanwhile, melt the butter over the
stove in a saucepan, add the milk, and heat just until warm.
(Microwave can be used instead.)
- Pour the
milk and butter mixture into the bowl with the yeast.
- Add the egg, salt, sugar, and whole
wheat flour. Stir well. (A Kitchen Aid mixer with a dough hook may be
used at this stage).
- Add the white flour one cup at a time
until the dough becomes a ball.
- Turn the dough out onto a floured
surface and knead*, adding more flour until
the dough is no longer sticky.
- Place the dough in a large, lightly
greased bowl. Cover with plastic wrap or a damp cloth, and set
in a
warm spot, free from drafts.
- Once the dough has doubled in size,
usually in about 1 - 1 1/2 hours.
- Pat or roll out to
12 x 9 inch rectangle.
- Filling: In a small bowl,
stir together the sugar and cinnamon to make the filling.
- Brush the dough with the melted butter and sprinkle with the
cinnamon sugar mix.
- Roll the dough
evenly to form a log and
cut crosswise into 16 pieces.
- Arrange the rolls on a baking
sheet or cake tin, cut side up, with sides touching.
Press down to flatten the rolls a little.
- Preheat the oven to 400 degrees F.
- Bake the bread in the preheated oven for
25 minutes or until golden brown.
- Mix the frosting ingredients to a smooth
paste. Spread on to warm buns and serve.
