Chocolate Fudge Waffles
These are a cross between a brownie
and a waffle, but maybe better served for dessert than for breakfast!
Ingredients:
2 eggs
1/4 cup vegetable or canola oil
1 teaspoon vanilla extract
1 cup buttermilk
1 cup all-purpose flour
3/4 cup sugar
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch salt
1/2 cup chopped walnuts
1/2 cup mini chocolate chips
Directions:
- Preheat waffle iron.
- In a large mixing bowl, whisk together
the eggs, oil and vanilla until light and fluffy, about 2
minutes.
- Mix in the buttermilk.
- Into a medium bowl, sift the flour,
cocoa, baking powder, baking soda and salt. Mix in the sugar.
- Stir the flour mixture into the egg
mixture until just mixed.
- Gently fold in the nuts and chocolate
chips.
- Spray waffle iron with non-stick spray
and bake until done.
- Serve immediately with ice cream or
whipped cream and chocolate sauce.
