Chocolate Fudge Waffles
These are a cross between a brownie and a waffle, but maybe better served for dessert than for breakfast!

Ingredients:
2 eggs
1/4 cup vegetable or canola oil
1 teaspoon vanilla extract
1 cup buttermilk
1 cup all-purpose flour
3/4 cup sugar
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch salt
1/2 cup chopped walnuts
1/2 cup mini chocolate chips


Directions:

  1. Preheat waffle iron.
  2. In a large mixing bowl, whisk together the eggs, oil and vanilla until light and fluffy, about 2 minutes. 
  3. Mix in the buttermilk.
  4. Into a medium bowl, sift the flour, cocoa, baking powder, baking soda and salt.  Mix in the sugar.
  5. Stir the flour mixture into the egg mixture until just mixed.
  6. Gently fold in the nuts and chocolate chips.
  7. Spray waffle iron with non-stick spray and bake until done.
  8. Serve immediately with ice cream or whipped cream and chocolate sauce.
