Chocolate, Raspberry Oatmeal
Streusel Squares
(Makes 24 squares)
Ingredients:
1
1/4 cups all-purpose flour
1 1/4 cups old fashioned oats, uncooked
1/3 cup sugar
1/3 cup packed brown sugar
1/2 teaspoon baking powder
1 1/2 sticks butter, cut into 1/2 inch cubes
3/4 cup raspberry preserves
1/2 cup milk chocolate chips
1/2 cup white chocolate chips (decoration)
Directions:
- Preheat
oven to 375 degrees Fahrenheit.
- In
a large bowl, combine flour, oats, sugars and baking powder.
- Using
fingertips, rub butter into the flour until the mixture resembles
breadcrumbs.
- Reserve
1 cup oat mixture for streusel. Set aside.
- Press
remaining oat mixture onto bottom of ungreased 8-inch square baking pan.
Bake for 10 minutes. Transfer to wire rack.
- Spread
preserves evenly over crust to within 1/2 inch of edges.
- Sprinkle
evenly with 1 cup chocolate chips.
- Combine
reserved oat mixture (or streusel) and sprinkle over chocolate chips,
patting gently.
- Bake
20 to 25 minutes or until golden brown.
- Cool
completely in pan on wire rack.
- Place
white chocolate chips in small zip lock baggie, microwave on low, for 10
seconds at a time until melted.
- Cut
a small corner off baggie and drizzle the squares with melted white
chocolate.
Let chocolate set before cutting into squares.
