Chocolate, Raspberry Oatmeal Streusel Squares

(Makes 24 squares)

                                    
   
Ingredients:
   
1 1/4 cups all-purpose flour
    1 1/4 cups old fashioned oats, uncooked
    1/3 cup sugar
    1/3 cup packed brown sugar
    1/2 teaspoon baking  powder
    1 1/2 sticks butter, cut into 1/2 inch cubes
    3/4 cup raspberry preserves
    1/2 cup milk chocolate chips

     1/2 cup white chocolate chips (decoration)

Directions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a large bowl, combine flour, oats, sugars and baking powder. 
  3. Using fingertips, rub butter into the flour until the mixture resembles breadcrumbs. 
  4. Reserve 1 cup oat mixture for streusel. Set aside.
  5. Press remaining oat mixture onto bottom of ungreased 8-inch square baking pan. Bake for 10 minutes. Transfer to wire rack.
  6. Spread preserves evenly over crust to within 1/2 inch of edges. 
  7. Sprinkle evenly with 1 cup chocolate chips. 
  8. Combine reserved oat mixture (or streusel) and sprinkle over chocolate chips, patting gently.
  9. Bake 20 to 25 minutes or until golden brown. 
  10. Cool completely in pan on wire rack. 
  11. Place white chocolate chips in small zip lock baggie, microwave on low, for 10 seconds at a time until melted.  
  12. Cut a small corner off baggie and drizzle the squares with melted white chocolate.  
    Let chocolate set before cutting into squares.
