Chocolate Kiss Cookies
                              
(Makes 2 dozen)

Ingredients:
1 cup sugar
1 stick unsalted butter, softened
1 egg
1 1/2 teaspoons vanilla
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon baking soda

2 tablespoons sugar
24 chocolate kiss or hugs candies, unwrapped


Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine 1 cup sugar and butter in large bowl and beat at medium speed, scraping bowl often, until creamy.
  3. Add egg and vanilla; continue beating until well mixed.
  4. Whisk together the flour, cocoa, baking powder and baking soda in medium bowl.
  5. Add the dry ingredients to the mixture and mix with a wooden spoon until combined.
  6. Shape dough into 1-inch balls. Roll in 2 tablespoons sugar.
  7. Place 2 inches apart onto parchment lined cookie sheets and bake for 9 to 11 minutes or until set.
  8. Carefully slide cookies and parchment paper off hot baking trays and onto wire racks.  Cool for 2 - 3 minutes.
  9. Press a chocolate kiss on top of each cookie. Cool completely.
