Chocolate Chip Cookie Pizza


Cookie Ingredients:

1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 white sugar
1 teaspoon vanilla extract
1 egg
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 cup semi-sweet chocolate chips

Frosting Ingredients:
1 cup semi-sweet chocolate chips
2 tablespoons butter
3 tablespoons milk
1 cup confectioners sugar
Variety of toppings, e.g. chocolate chips, M&M candies, flaked coconut, raisins, walnut pieces, sprinkles

Directions:

  1. Preheat oven to 350 degrees F.
  2. Combine butter, brown sugar, white sugar, vanilla and egg until well
    combined.  
  3. Stir in the flour and the baking soda (dough will be stiff). Then finally stir in the chocolate chips.
  4. Pat dough onto an un-greased 8 or 9 inch pizza pan or on a cookie sheet.
  5. Bake at 350 degrees F for 15 minutes or until golden brown.
    Remove cookie from oven and let cool.
  6. In a saucepan, heat the chocolate chips, remaining butter and milk over very low heat. 
    Stir until chocolate is melted.
  7. Remove from heat and stir in confectioners sugar. Beat until smooth and glossy.
  8. Spread on top of the baked and cooled cookie.
    Immediately sprinkle with your choice of toppings.
    Let stand until set, remove from pan and cut into wedges.
    Enjoy!



Healthier version with:
Cream
cheese frosting and fresh fruit toppings

Ingredients:
8 oz cream cheese
2 tablespoons butter, softened
1 1/2 cups confectioners sugar
2 - 3 tablespoons pineapple/orange juice
Fresh fruit of your choice, peeled and chopped 
Flaked coconut (optional)

Directions:

  1. Beat together the cream cheese, butter and confectioners sugar until smooth and creamy. 
  2. Add the fruit juice slowly until the mixture becomes a spreading consistency.
  3. Spread on top of baked and cooled cookie.
    Sprinkle with your choice of fresh fruit toppings and coconut if desired.
