Chocolate Chip Biscotti
The baked cookies may be dipped in melted
chocolate for a special occasion.
(Makes 3 1/2 dozen)
Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
4 tablespoons unsalted butter, softened
2 eggs
1 teaspoon vanilla
1/3 cup white chocolate chips
1/3 cup semi-semi chocolate chips
Directions:
- Preheat oven to 350 degrees Fahrenheit.
- In a medium bowl, sift or whisk together the
dry ingredients, flour, baking powder and salt.
- In a large bowl, cream the butter and sugar
with an electric mixer until light and smooth.
- Add the eggs, one at a time, beating well
after each addition.
- Mix in the vanilla.
- Add the flour to the mixture and stir with a
wooden spoon until the a dough forms, then stir in the chocolate chips.
- Turn dough out onto lightly floured surface.
Gather dough together and divide in half.
- Roll each half into 12-inch-long log (about
2 inches wide). Carefully transfer logs to 1 greased baking sheet, spacing 3
inches apart.
- Bake logs until almost firm to touch and
light brown about 30 minutes. Cool logs on baking sheet until
cool to touch. Maintain oven temperature.
- Carefully transfer logs to cutting board.
Using serrated knife and gentle sawing motion, cut logs
crosswise into generous 1/2-inch-thick slices.
- Place slices, cut side down, back onto
baking sheet. Bake until firm and pale golden, about 5 - 10 minutes per
side. Transfer cookies to racks and cool.
