Chocolate Chip Biscotti
The baked cookies may be dipped in melted chocolate for a special occasion.
(Makes 3 1/2  dozen)

Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
4 tablespoons unsalted butter, softened
2 eggs
1 teaspoon vanilla
1/3 cup white chocolate chips
1/3 cup semi-semi chocolate chips

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, sift or whisk together the dry ingredients, flour, baking powder and salt.
  3. In a large bowl, cream the butter and sugar with an electric mixer until light and smooth.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Mix in the vanilla.
  6. Add the flour to the mixture and stir with a wooden spoon until the a dough forms, then stir in the chocolate chips.
  7. Turn dough out onto lightly floured surface. Gather dough together and divide in half.
  8. Roll each half into 12-inch-long log (about 2 inches wide). Carefully transfer logs to 1 greased baking sheet, spacing 3 inches apart.
  9. Bake logs until almost firm to touch and light brown about 30 minutes. Cool logs on baking sheet until
    cool to touch.  Maintain oven temperature.
  10. Carefully transfer logs to cutting board. Using serrated knife and gentle sawing motion, cut logs
    crosswise into generous 1/2-inch-thick slices.
  11. Place slices, cut side down, back onto baking sheet. Bake until firm and pale golden, about 5 - 10 minutes per side. Transfer cookies to racks and cool.
