Chinese Chicken Salad

(4 servings)

Ingredients:
Salad Dressing:
3 tablespoons Hoisin sauce*
2 teaspoons honey
1-teaspoon ginger – finely grated
6 tablespoons rice wine vinegar
1-tablespoon sesame oil
2-tablespoons canola oil
1-tablespoon soy sauce

Salad:
1 small or 1/2 Romaine lettuce, shredded
1/2 Chinese Napa cabbage, shredded
1 carrot, peeled and grated
1 bunch scallions, green part only, chopped
1 or 2 cooked chicken breasts, cubed

8 wonton or 2 spring roll wrappers
2 tablespoons vegetable oil
1 can mandarin oranges, drained
 

Directions:

  1. Prepare dressing: In a bowl, whisk all the ingredients for the dressing.  Set aside.
  2. Prepare wonton crisps:  Brush wonton wrappers with oil and cut into thin strips. Bake in preheated
    oven at 350 degrees F. for  5 - 10 minutes or until golden brown.
  3. Prepare salad:  In a large bowl, toss the lettuce, cabbage, carrots, scallions and chicken with enough
    salad dressing to coat.
  4. Garnish with crispy wontons and mandarin oranges.  Serve.
