Spicy Cheese Quesadillas
If you like grilled cheese sandwiches, then you'll love these!

Ingredients:
8 (7 - 8 inch) flour tortillas
2- 3 cups grated cheese (e.g. Cheddar, Monterey jack etc)
1 small can diced green chilies (optional)
 

Directions:

  1. Arrange 4 tortillas on work surface. (Spread 1/2 teaspoon green chili over tortilla if using.)
  2. Sprinkle cheese over half of the tortilla and fold over to form a semi-circle.
  3. Press together lightly.
  4. Heat heavy large skillet over medium-high heat.  Add tortilla to skillet.
  5. Cook until bottom is golden brown, about 3 minutes. Turn quesadilla over, cook until bottom is golden brown and cheese melts. 
  6. Transfer to cutting board. Cut quesadilla into 3 wedges. Transfer to platter. Repeat with remaining tortillas. Serve hot with salsa.
