Chicken Cordon Bleu
(Serves 4)
Ingredients:
4 skinless, boneless chicken breasts
1/4 teaspoon salt
1/8 teaspoon ground black pepper
4 slices Swiss or white cheese
4 slices cooked ham
1 egg beaten with 1/4 cup milk
2 cups seasoned bread crumbs
Directions:
- Preheat oven to 375 degrees Fahrenheit.
- Line a
7x11 inch baking sheet with foil and coat with nonstick cooking spray.
- Place one chicken breast into a gallon
ziplock bag. Sprinkle a few drops of water into the bag.
Using a rolling pin , pound to 1/4 inch thickness. Repeat with remaining
chicken.
- Sprinkle each piece of chicken on both
sides with salt and pepper. Place 1 cheese slice and 1 ham slice
on top
of each breast. Roll up each breast, tucking in the sides and secure
with a toothpick.
- Place egg mixture and breadcrumbs into
separate medium bowls.
- Roll each chicken breast first into egg
mixture and then cover with breadcrumbs.
- Place on baking sheet and bake for 30 to
35 minutes, or until chicken is no longer pink.
- Remove toothpicks,
and serve immediately.
- Cooks tip: An extra slice of cheese
may be placed on top of each chicken if desired.
