Chicken Cordon Bleu
(Serves 4)

Ingredients:
4 skinless, boneless chicken breasts
1/4 teaspoon salt
1/8 teaspoon ground black pepper
4 slices Swiss or white cheese
4 slices cooked ham
1 egg beaten with 1/4 cup milk
2 cups seasoned bread crumbs


Directions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Line a 7x11 inch baking sheet with foil and coat with nonstick cooking spray.
  3. Place one chicken breast into a gallon ziplock bag.  Sprinkle a few drops of water into the bag.  Using a rolling pin , pound to 1/4 inch thickness. Repeat with remaining chicken.
  4. Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice
    on top of each breast. Roll up each breast, tucking in the sides and secure with a toothpick.
  5. Place egg mixture and breadcrumbs into separate medium bowls.
  6. Roll each chicken breast first into egg mixture and then cover with breadcrumbs.
  7. Place on baking sheet and bake for 30 to 35 minutes, or until chicken is no longer pink. 
  8. Remove toothpicks, and serve immediately. 
  9. Cooks tip: An extra slice of cheese may be placed on top of each chicken if desired.
