Super Bowl Chicken Chili

This recipe uses cooked breast and beans to make a healthy one-pot meal.
A great supper dish for Super Bowl Sunday.
(Serves 4 - 6)
   

Ingredients:
2 tablespoons olive oil
1 large onion, cut into dice
1 green bell pepper, cut into dice
2 cloves garlic, minced or grated
1/2  - 2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
2 teaspoons salt
1 (28 ounce) can whole tomatoes with juice (squeeze between fingers to break up)
1 tablespoon tomato paste
2 cups low sodium chicken broth
1 (15 ounce) kidney beans, drained and rinsed
1 (15 ounce) black beans, drained and rinsed
1 tablespoon semi-sweet chocolate, chopped

2 split chicken breasts (bone in), cooked and shredded
2 tablespoons fresh cilantro, chopped (optional)

Directions:

  1. In a large heavy pot, heat oil over medium heat and add the onion, bell pepper and garlic and continue to
    cook for a further 10 minutes.
  2. Stir in the chili powder (amount depending on taste), cumin and salt and cook for one more minute.
  3. Add the tomatoes with juice, broth, beans and chocolate. 
  4. Bring to the boil, and then reduce heat to a simmer uncovered until chili thickens, stirring occasionally,
    about 20 minutes.  
  5. Stir in the cooked chicken and cook a further 10 minutes. 
  6. Add cilantro, adjust seasoning and serve.
