Mini Cherry Cheesecakes

If you’ve never made a cheesecake before, these make a quick and easy dessert for the family and special occasions.
(Makes 12)

Ingredients:
12 vanilla wafers

2 (8 ounce) packages cream cheese, at room temperature
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract

1 can fruit pie filling, e.g., cherry, blueberry


Directions:

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Line a 12-cup muffin tin with cupcake liners.

  3. Place 1 vanilla wafer into each paper cup.

  4. Place the cream cheese, sugar, eggs and vanilla in a large mixing bowl, beat with an electric mixer until smooth, light and creamy.

  5. Fill each muffin liner two thirds to the top with this mixture.

  6. Bake for 20 -25 minutes or until the mixture is firm to the touch and before the cakes crack. Cool in refrigerator for at least 30 minutes.

  7. Top with a teaspoonful of fruit pie filling.
