Cheese
and Sausage Skillet Breakfast
(Serves 4 - 6)
This all-in-one breakfast casserole will soon be your favorite
brunch recipe.
Ingredients:
4
slices white or wheat bread, cut into cubes
8 ounces pork or chicken sausage, reduced fat
1/2 onion, peeled and chopped
1/2 green bell pepper, chopped
1 cup grated Cheddar cheese
5 large eggs
1 cup 2% milk
1 teaspoon dry mustard
1/2 teaspoon salt
Freshly ground black pepper
Directions:
- Preheat
oven to 350 degrees Fahrenheit.
- Place
a medium size cast iron skillet (make sure it is ovenproof) over
a medium flame.
- Add
the sausage, onion and green bell pepper to the pan, stir
constantly until the sausage is brown and crumbly.
- Remove
from heat. Add the cut up bread and stir together to leave an
even layer on the bottom of the skillet.
- Top
with the grated cheese.
- Whisk
together the eggs in a large bowl, add the milk, mustard, salt
and pepper.
- Pour
over the sausage mixture.
- Bake
in hot oven for 20 - 25 minutes or until puffed and center is
set.
