Cheese and Sausage Skillet Breakfast

(Serves 4 - 6)
This all-in-one breakfast casserole will soon be your favorite brunch recipe.

Ingredients:
4 slices white or wheat bread, cut into cubes
8 ounces pork or chicken sausage, reduced fat
1/2 onion, peeled and chopped
1/2 green bell pepper, chopped
1 cup grated Cheddar cheese
5 large eggs
1 cup 2% milk
1 teaspoon dry mustard
1/2 teaspoon salt
Freshly ground black pepper

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Place a medium size cast iron skillet (make sure it is ovenproof) over a medium flame.
  3. Add the sausage, onion and green bell pepper to the pan, stir constantly until the sausage is brown and crumbly.
  4. Remove from heat. Add the cut up bread and stir together to leave an even layer on the bottom of the skillet. 
  5. Top with the grated cheese.
  6. Whisk together the eggs in a large bowl, add the milk, mustard, salt and pepper.
  7. Pour over the sausage mixture.
  8. Bake in hot oven for 20 - 25 minutes or until puffed and center is set.
