  Cheddar, Scallion Biscuits
(Makes 12)

Ingredients: 
3 cups all purpose flour
2 teaspoons sugar
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
1 stick chilled unsalted butter, cut into 1/4-inch pieces
4 ounces (1 cup) Cheddar cheese, grated
6 scallions, finely chopped
1 cup buttermilk

Directions:

  1. Preheat oven to 425°F. 
  2. Whisk flour, sugar, baking powder, salt and baking soda in large bowl to blend.
  3. Using fingertips, rub butter into dry ingredients until mixture resembles coarse meal. 
  4. Stir in grated cheese and chopped scallions.
  5. Add buttermilk and stir until evenly moistened and forms a ball.
  6. Turn the sticky mixture onto a clean, floured surface.  Knead the dough 2 or 3 times until it comes together.
  7. Roll the dough gently into a rectangle, 1 inch thickness.  Dust with flour to stop dough sticking to the pin or counter.
  8. Cut biscuits into triangles and place onto a baking sheet lined with parchment paper.
  9. Bake for 15 - 20 minutes or until golden brown.  Cool on wire rack.
