Cheddar, Scallion Biscuits
(Makes 12)
Ingredients:
3 cups all purpose flour
2 teaspoons sugar
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
1 stick chilled unsalted butter, cut into 1/4-inch pieces
4 ounces (1 cup) Cheddar cheese, grated
6 scallions, finely chopped
1 cup buttermilkDirections:
- Preheat oven to 425°F.
- Whisk flour, sugar, baking powder, salt and
baking soda in large bowl to blend.
- Using fingertips, rub butter
into dry ingredients until mixture resembles coarse meal.
- Stir in grated cheese and chopped scallions.
- Add buttermilk and stir until evenly
moistened and forms a ball.
- Turn the sticky mixture onto a clean, floured surface.
Knead the dough 2 or 3 times until it comes together.
- Roll the dough gently into a rectangle, 1 inch
thickness. Dust with flour to stop dough sticking to the pin or counter.
- Cut biscuits into triangles and place onto a baking sheet
lined with parchment paper.

Bake for 15 - 20 minutes or until golden brown.
Cool on wire rack.
