Black Bottom Cupcakes
(Makes 12)
Ingredients:
Cream Cheese
Filling:
8 oz cream cheese, room temperature
1/4 cup sugar
1 large egg
1/2 teaspoon vanilla extract
1/4 cup miniature chocolate chips
Cake:
1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
3/4 cup light brown sugar
1/4 tsp salt
1 tsp baking soda
1 cup water
1/3 cup canola oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
Directions:
- Preheat
oven to 350 degrees Fahrenheit.
- Line one
12-cup muffin tin with paper liners.

Prepare filling:
In a medium bowl, beat cream cheese until smooth. Beat in
egg, sugar and vanilla.
Stir in chocolate chips and set aside.

Prepare cake:
In a large bowl, whisk together flour, cocoa powder, sugar,
salt and baking soda.
- In a separate bowl, mix the
water, oil, vinegar and vanilla.
- Make a
well in the center of the dry ingredients.
Stir in the wet ingredients until just combined and no
streaks of flour remain.
- Divide
cake batter evenly among cupcake liners. Place 1 heaped teaspoon of cream
cheese mixture in the center of each cupcake.
- Bake for
20 - 25 minutes. A toothpick inserted into the side (cake only part) should
come out with a
few moist crumbs on it.
- Cool for
5 minutes. Cream cheese filling should sink slightly in this time. Remove to
wire racks to cool completely.
