Black Bottom Cupcakes

(Makes 12)

ngredients:
Cream Cheese Filling:
8 oz cream cheese, room temperature
1/4 cup sugar
1 large egg
1/2 teaspoon vanilla extract
1/4 cup miniature chocolate chips

Cake:
1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
3/4 cup light brown sugar
1/4 tsp salt
1 tsp baking soda
1 cup water
1/3 cup canola oil
1 tablespoon white vinegar
1 teaspoon vanilla extract


Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Line one 12-cup muffin tin with paper liners.
  3. Prepare filling:  In a medium bowl, beat cream cheese until smooth. Beat in egg, sugar and vanilla.  
    Stir in chocolate chips and set aside.
  4. Prepare cake:  In a large bowl, whisk together flour, cocoa powder, sugar, salt and baking soda.
  5. In a separate bowl, mix the water, oil, vinegar and vanilla.
  6. Make a well in the center of the dry ingredients. Stir in the wet ingredients until just combined and no
    streaks of flour remain.
  7. Divide cake batter evenly among cupcake liners. Place 1 heaped teaspoon of cream cheese mixture in the center of each cupcake.
  8. Bake for 20 - 25 minutes. A toothpick inserted into the side (cake only part) should come out with a
    few moist crumbs on it.
  9. Cool for 5 minutes. Cream cheese filling should sink slightly in this time. Remove to wire racks to cool completely.
