Belgian Waffles
You will need a waffle iron to make
these delicious homemade buttermilk waffles. They are much better than
frozen and easy to make! Serve with fresh blueberry syrup - recipe below.
(Makes 10 waffles)
Ingredients:
2 cups all-purpose or pastry flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
2 large eggs, separated
2 tablespoons canola oil
2 cups low fat buttermilk
1 teaspoon vanilla extract
Directions:
- Heat oven
to 200 degrees Fahrenheit. Preheat the waffle iron.
- Sift the
dry ingredients - the flour, sugar, baking powder, salt and baking soda
into large bowl.
- In a
medium bowl, whisk eggs, buttermilk, vanilla and oil until lightly
beaten.
- Whisk
buttermilk mixture into dry ingredients until just smooth.
- Spray
waffle iron with non-stick spray and bake waffles until crisp and golden
brown, 4 to 5 minutes.
- Transfer
each batch directly onto oven rack to keep warm. Repeat. Dust waffles
with confectioners sugar; serve with blueberry syrup.
Make-Ahead Tip: Prepare and bake waffles. Cool. Freeze in zip-lock
freezer bags up to 2 weeks.
Reheat in toaster or 350 degree Fahrenheit
oven.
Blueberry Syrup
Try this syrup loaded with fresh
blueberries for a change from maple.
Ingredients:
2 cups fresh or frozen
blueberries
1/2 cup water
1/3 cup sugar
2 teaspoons lemon juice
Directions:
- In a
medium sauce pan, combine 1 cup of the blueberries, the water, sugar and
lemon juice. Cook and stir over medium heat for 2 to 3 minutes or until
sugar dissolves. Bring to the boil. Reduce heat and simmer, uncovered,
for 15 to 20 minutes or until slightly thickened, stirring occasionally.
- Stir in
remaining 1 cup blueberries and cook, stirring occasionally, 2 to 3
minutes more or until blueberries become soft. Serve warm. Cover and
refrigerate remaining syrup for up to 1 week.
